Let me tell you....
I have a bad habit of stopping at the grocery store on a daily basis for this and that. The plan is to pick up something to make for dinner but the truth of the matter is, I end up with a cart full almost every time. Why? Because I go to the store 95% of the time a hungry girl. Since I work well when I am organized and have a plan...I thought I should implement what I preach (insert smiley face).
We have been writing out our weekly dinner menu and it isn't only saving us time...it's also saving us money! I no longer fret about what to make for dinner. We plan out our menu on Sunday and head to the grocery store for the items needed for the week. That means, no more grocery stops during the week and spending money on impulse buys! For us, planning out our meals this way means eating healthier too. Less fast food runs!
Another great thing we do along with this menu plan is delegate who is in charge of dinner and clean up each night. With our increasingly busy schedules a plan is a must and it teaches the girls responsibility. They are learning more than responsibility though...they are learning to cook/bake and also the importance of cleaning up after themselves and serving others. It is exciting for me that they will be ahead of the game in college. When their classmates are making Ramen Noodles and Frozen Pizza, they will be cooking real food!
Since it is still cold(ish) out...this soup recipe is sure to keep you warm. It is super easy to throw together in the morning and a great, satisfying meal to come home to! Enjoy!
Slow Cooker Chicken Taco Soup
1 - Chopped Onion
1 (16oz) Can of Chili Beans
1 (15oz) Can of Black Beans
1 (15oz) Can of Whole Kernel Corn
1 (8oz) Can Tomato Sauce
1 (12oz) Can/Bottle Beer
2 (16oz) Cans of Diced Tomatoes w/Green Chilis
1 pkg Taco Seasoning
3 Whole Chicken Breasts (I use one whole rotisserie chicken)
Shredded Cheddar Cheese
1. Cook chicken breasts and cube (or de-bone your rotisserie chicken). Put the chicken, onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Set slow cooker on low heat, cover, and cook for 5 to 8 hours.
2. Serve topped with shredded Cheddar cheese, a dollop of sour cream, cilantro and crushed tortilla chips, if desired.
