A comforting batch of soup is perfect for a snowy day like today! This recipe doesn't take long to make and is sure to fill any healthy appetite after building that (hopefully last) snowman of the season!! Enjoy!
Serves 6 Prep/Total Time 30 minutes
Nutritional Facts: 1 serving (1cup)
1 lb - Diced Smoked Kielbasa
6 Medium Potatoes, peeled and cubed
2 cups Frozen Corn
1-1/2 cups Chicken Broth
1 Celery Rib, sliced
1/4 cup Carrot, sliced
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Salt
1/4 tsp Pepper
1-1/2 cups Milk
2/3 cup Cheddar Cheese, shredded
1 tsp Fresh Parsley, minced (optional)
1. In a large saucepan, brown sausage and drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil.
2. Reduce heat, cover and simmer for 15 minutes or so, until vegetables are tender. Add milk, cheese, parsley and sausage. Cook and stir over low heat until cheese is melted and soup is heated through.
